Vegetarian Pansit Miki Guisado

Hey Foodies! Pancit Miki is one of the variations of Filipino noodles made of fresh and thick egg noodles and usually cooked stir fried or as a thick nodle soup (lomi).

Ingredients:

  • 5 cloves garlic
  • 2 red onions
  • 50g king oyster mushrooms
  • 30g dried shiitake mushrooms
  • 30g green beans
  • 1 medium carrot
  • 1 medium red bellpepper
  • 2-3 stalks bokchoy or pechay
  • 1 medium cabbage
  • 4 tbsp cooking oil
  • salt and pepper
  • 3 tbsp-4 tbsp vegetarian oyster sauce
  • 1/4 cup mushroom stock

Noodles:

  • 500g Flat Miki Noodles
  • 2 cups mushroom stock
  • 4 cups water
  • 3 tbsp vegetarian oyster sauce
  • Garnish with spring onion and calamansi (Philippine lemon)
