Chicken in the Pan

This one pan chicken with honey garlic sauce is one of the surprizing dishes I've made recently. This skillet chicken is tender, juicy and packed with flavours. A whole meal in one pan; proteins, carbs, fats and veggies. This easy one pan chicken on a stovetop is the perfect meal for midweek dinner or even for holidays.

Ingredients:

For the marinate:

  • 5 Chicken thighs
  • 2 tablespoons Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1-2 teaspoons Paprika
  • 1 teaspoon Oregano

For the dish:

  • 2 tablespoons Oil
  • 1 Onion, chopped
  • 1lb (450g) Potatoes, chopped
  • 3 Carrots, chopped

For the sauce:

  • 1/4 cup (60ml) Soy sauce
  • 1/4 cup (85g) Honey
  • 3-4 Garlic cloves, crushed
  • 1 cup (240ml) Chicken/vegetable stock

Directions:

1. In a large bowl, mix oil, salt, pepper, paprika and oregano. Add the chicken and mix, until well coated.
2. In a large pan, heat oil. When hot, add the chicken and cook for 3-4 minutes on each side. When golden and cooked through, remove from heat and set aside.
3. To the same pan add chopped onion and cook for 2-3 minutes, add potatoes, carrots and cook for 10 minutes.
4. Meanwhile make the sauce: in a bowl or a measuring cup mix soy sauce, honey, stock and crushed garlic.
5. Pour the sauce to the pan, add the chicken and cook for 5-10 minutes.
6. Optional: bake the dish in the oven for 5-10 minutes.
