Green Lentil Gumbo Soup
Ingredients:
- 1 cup green lentils, rinsed
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- Green onions and fresh parsley for garnish
Instructions:
Step 1: In a large pot, heat vegetable oil over medium heat. Add sliced smoked sausage and cook until browned.
Step 2: Add diced onion, bell pepper, and celery. Cook until vegetables are softened.
Step 3: Stir in minced garlic and cook for an additional minute until fragrant.
Step 4: Add rinsed green lentils, diced tomatoes, dried thyme, paprika, cayenne pepper, salt, and black pepper. Mix well.
Step 5: Pour in vegetable or chicken broth and bring the soup to a boil. Reduce heat, cover, and simmer for about 20-25 minutes or until lentils are tender.
Step 6: Adjust seasoning if needed. Serve hot, garnished with chopped green onions and fresh parsley.
