Mayo vs Kewpie
I've bee making fresh mayo from my backyard chicken eggs ever since I had the chance to and with my recent discovery of Kewpie I just had to take this opportunity to give a try and share it with all of you! Try it out, change it up, customize it to the max and enjoy these incredible homemade condiments.
INGREDIENTS:
American (Western) Mayo:
- 2 whole eggs
- 2 cups canola, veggie, or sunflower oil
- 3-4 tbsp crushed ice
- 3 tbsp distilled vinegar
- salt to taste
Kewpie Mayo:
- 4-5 egg yolks
- 2 cups canola, veggie, or sunflower oil
- 3 tbsp rice wine vinegar
- 3 tbsp Dashi (or 1 tbsp Dashi powder)
- 3-4 tbsp crushed ice
- salt to taste
