Wild Berry Pancake Cake is a delicious breakfast treat that combines the flavors of fluffy pancakes and sweet mixed berries. Here's a recipe to make it at home:
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and white sugar until well combined.
- Add the milk, egg, and melted butter to the bowl and whisk again until the mixture is smooth and creamy.
- Fold in the mixed berries gently with a spatula.
- Grease a 9-inch round cake pan with butter or cooking spray.
- Pour the pancake batter into the cake pan and spread it out evenly.
- Bake the pancake cake for 20-25 minutes, or until it is golden brown and a toothpick inserted into the center comes out clean.
- Remove the pan from the oven and let the pancake cake cool for 5-10 minutes before slicing and serving.
- Serve the pancake cake with a drizzle of maple syrup, whipped cream, and more fresh berries on top, if desired. Enjoy!
