Salmon Kebabs with Vegetables

I do not really like fish, prefer chicken or meat (in extreme cases seafood), but sometimes it can be served so that it will not be fish. Take note if you need to feed the children or just simply unusually serve the habitual salmon (or any other red fish). Today there will be kebabs of salmon with zucchini and lemon in a magical dressing. Thanks to it, the kebabs turn out to be so delicious with good glaze and aromas of herbs.

  • 1. I got exactly three kebabs, so increase the number of ingredients in proportion to their needs. I want to draw your attention to the fact that you can cook them both at home in the oven and in the fresh air in the grill or on the fire. The taste, of course, will be different, but actually it is not critical.
  • 2. First – soak the skewers (if you use bamboo, like me) in a glass of water, this is necessary so that they do not start to burn treacherously.
  • 3. Then cut the fish and squash (you can zucchini) and lemons. Cut fish into pieces of 2 cm, squash into half along and across the thick bars, lemons into thin rings.
  • 4. Now prepare the glaze. Mix olive oil, honey, herbs (here you can take any dried ones, which you love more), paprika (you can 50-50 spicy and sweet), salt and lemon juice (with it carefully, not everyone likes a slightly soar taste in fish) in the bowl.
  • 5. Then puncture our kebabs on skewers. Squash, lemon ring, folded twice, fish. And do so 2-3 times. Spread finished kebabs on parchment on a baking sheet. And grease generously with a brush on both sides.
  • 6. I do this in two stages, I greased both sides, waited a bit and smeared again. As it seems to me, the layer of glaze turns out denser and this is an advantage for us.
  • 7. Bake in the oven for 7-9 minutes, do not overdo it, otherwise the fish will be dry.
  • 8. It does not make sense to keep ready-made kebabs for a long time, immediately simply serve them or with a side dish like rice, fresh greens and other things. Thanks to the sauce and the fact that we fried fish with lemon and zucchini, everything turns out to be quite juicy, tasty and fragrant. Even to me, not a special lover of fish, kebabs suited to taste.
