Crispy Chinese Eggplant
Chinese-style crispy eggplant is a delicious vegetarian dish that is easy to make. Here is a recipe for making crispy Chinese eggplant:
Ingredients:
- 2 large eggplants
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes
- 2 green onions, sliced
Instructions:
- Preheat your oven to 425°F (218°C).
- Cut the eggplants into bite-sized pieces and place them in a large mixing bowl.
- In a separate bowl, combine the cornstarch, salt, and pepper.
- Sprinkle the cornstarch mixture over the eggplant pieces and toss them until they are fully coated.
- Line a baking sheet with parchment paper and spread the eggplant pieces in a single layer on the sheet.
- Drizzle the vegetable oil over the eggplant pieces and bake them in the preheated oven for 15-20 minutes, or until they are crispy and golden brown.
- While the eggplant is baking, prepare the sauce. In a small saucepan, heat the sesame oil over medium-high heat.
- Add the minced garlic to the pan and cook for 1-2 minutes, or until it is fragrant.
- Add the soy sauce, rice vinegar, honey, and red pepper flakes to the pan and stir to combine.
- Bring the sauce to a simmer and cook for 2-3 minutes, or until it has thickened slightly.
- When the eggplant is done baking, transfer it to a serving dish and pour the sauce over the top.
- Sprinkle sliced green onions over the top of the eggplant and serve hot.
