Chicken Meatball Soup

We cook a diet soup with chicken meatballs for dinner. The dish is very tasty and aromatic, thanks to fresh herbs and spices. Such meatballs can be cooked not only from chicken, but also from turkey meat or minced meat. The recipe is very simple and fast, so it is great for everyday menus.

  • Chicken skeleton

  • 1. Wash chicken skeleton and pour it with water. Put the pan on the fire and bring the water to a boil. Before boiling, remove the foam with a noise. Cook the broth for a half an hour, then get the chicken skeleton from the broth.
  • 2. Wash potatoes and then peel. Cut the tubers into cubes.
  • 3. Lower the cut potatoes into a pan with the prepared broth.
  • 4. Clean carrots and cut into strips. Cut the onion bulb into a cube.
  • 5. Warm up a few spoons of sunflower oil in a frying pan. Put the vegetables and butter in the frying pan. Stirring, pass them on a slow fire until soft.
  • 6. Then add steamed vegetables to the soup.
  • 7. Next, put pasta in the chicken soup. Cover the pan with a lid and continue cooking the soup over low heat.
  • 8. Prepare minced meat for chicken meatballs. Wash chicken fillet and peel from the film and fat. Cut the meat into small pieces, put them into the blender bowl. Add a small onion to the chicken, cut before into 4 parts, a little salt and spices.
  • 9. Grind all the ingredients into a homogeneous, thick ground meat with a blender or meat grinder. Form small meatballs of the same size with hands soaked in cold water.
  • 10. Drop the ready-made meatballs into the boiling soup. Cook all the ingredients for 7-10 minutes, so that the meatballs are cooked, and the vegetables and pasta become soft.
  • 11. Then add finely chopped greens of dill and parsley to the soup. Salt a dish to taste, season it with spices. Add black pepper and bay leaf.
  • 12. Leave the soup for a minute and turn off the fire. Serve the chicken soup with meatballs hot with slices of fresh bread or crackers.
