Lime creme brulee

Everyone who tried creme brulee, maybe, has fallen in love with it forever. Very delicate, vanilla dessert, which is so delicious to eat with a spoon, and if also there is a top layer of hard caramel – it's just heaven. The dessert is very aestival, tastes good with fresh berries, especially this is a plus for summer hot days since it is quite cool.

  • 1. Prepare a zest of two limes and seeds of a vanilla pod.
  • 2. Rub yolks (4 pcs) with sugar (50 g) until the mass is almost white.
  • 3. Bring cream 33% (500 g) with sugar (50 g), vanilla pod with seeds and lime peel to a boil in the saucepan.
  • 4. To the mistress of the note – this way you can aromatize cream for desserts, getting any tastes. For example, you can add basil, rosemary, mint and other herbs or spices, and getting cream with the taste of added ingredients.
  • 5. Add the cream mixture to yolk one in several stages, filter well and mix every time until homogeneous.
  • 6. Put a towel on a baking tray with sides or a wide baking dish, put the molds on top then (they should not be large), pour the resulting mixture into them. Then gently pour the hot water into the mold so that it covers the molds by half.
  • 7. Bake in the oven at 175 degrees for 30-50 minutes, the center of mass should shake a little, but the edges are already baked. Remove from the oven and cool down for about 30 minutes, then put into the fridge for a couple of hours until completely solidified.
  • 8. Pour 1 tablespoon of sugar into each mold to decorate the caramel, spread over the surface and caramelize with a burner or in the oven in grill mode on the uppermost shelf.
  • 9. Here, you need skills, of course, and better skip this step if you are in doubt.
