Shortbread cookies with jam

I only love home cookies, the ones that I cook myself or my relatives cook, here the confidence in the products is higher and the taste can be adjusted to yourself. I decided to share a dessert of very fast and convenient cookies. The trick is that the prepared dough rolls into separate layers (the size of one paper sheet) and is kept in the fridge or freezer until its high point. Either when you want a cookie or guests suddenly came – you just turn on the oven, get one such layer of dough from the fridge, 3 minutes for cutting out cookies, about 12 minutesfor jam and oven. See what I mean? Yes, this cookie can be cooked literally while the kettle is boiling water. The cookiesare sandy, that is very crumbly with a characteristic crumb. I like these because it is a pleasure to eat them, and it is not very difficult to cook. And the most appetizing in them is that the taste can be slightly varied –add any nuts or seedsin the dough, and set off any jamfrom above. Can you imagine how many combinations are produced?

  • 1. First, beat room temperature butter (220 g) with a mixer at high speed, we fill it with oxygen.
  • 2. Next, you need to add three types of sugar: white (50 g), cane (50 g) and powdered sugar (60 g). Cane and whiteare interchangeable if everything is absolutely difficult. Powder is important, it will give an even more friable texture. There is also nutmeg (1/2 tsp) and a pinch of salt. Whisk well for about three minutes.
  • 3. Put two yolks into the dough.
  • 4. At this stage, crush the nuts or seeds. The combination and tastes can be different; you need to add 50 g of small crumbles.
  • 5. Turn off the mixer and add flour (290 g).
  • 6. Turn the mixer to the lowest speed and whisk the dough until the flour is completely mixed with the dough. Then add nuts. Here I was shoveling with a blade.
  • 7. Divide the dough into two pieces and roll each one on the film. Coverthe dough with parchment paper and roll the dough with a rolling pin on it so the dough is not sticky to the rolling pin. The thickness of the dough should be about 5-6 mm, but do not do thinner, it will not be so delicious. Coverfinished layers with a film from above and putit into the fridge at least for a couple of hours. I just fold the layers in the films one on top of the other, I do not take much space.
  • 8. Two hours later, Play the scenario «Unexpected Guests». Suppose that in a quick way you have prepared a pair of salads, guests are satisfied and now we will surprise them with cookies. We put the oven at 175 degrees. We take the layer of dough and cut out any molds. The dough perfectly keeps the form, so take anything: circles, hearts, asterisks, little animals.
  • 9. Cut out and put on a baking sheet covered with parchment. And from the top of the bag (a piece of a package with a cut off corner) put jam – such a round drop in the center.
  • 10. When we have finished with the first layer of the dough, put the cookies into the oven. Keep an eye on them as soon as the first signs of rudeness (usually on the sides) appear, you can put the biscuits out. If you love more fried – keep themfor one more minute.
  • 11. During this time, the jam will spread a little and become flat – what we need.
  • 12. The cookies will be very soft to the timethey are cooled down. Try not to touch him until this moment. But when it cools down, immediately serve on the table.
