Apples Pumpkin Cottage Cheese Turnovers

Gentle, soft and incredibly delicious turnovers from cottage cheese dough are ideal for a family tea party. The apple and pumpkin filling is delicious and juicy, with a spicy note of cinnamon. The recipe is simple and fast enough, pastry always turns out incredible. From this amount of ingredients, 16 turnovers are obtained.

Ingredients

  • Whole wheat flour
    280 g
  • Cottage cheese
    200 g
  • Sugar
    200 g
  • Egg
    1 pcs
  • Vegetable oil
    100 ml
  • Baking powder
    10 g
  • Vanillin
    1 pinch
  • Salt
    1 pinch
  • Apple
    2 pcs
  • Pumpkin
    300 g
  • Butter
    30 g
  • Ground cinnamon
    0.25 tsp



Steps

  • 1. In deep bowl let’s combine cottage cheese and 100 g sugar. Using a submersible blender, mix the ingredients into a homogeneous mixture.
  • 2. Add 1 chicken egg and vegetable oil in the received cottage cheese mixture. Mix until homogeneity.
  • 3. Then add baking powder, a pinch of salt and vanillin to the dough.
  • 4. In several steps let’s add sieved wheat flour to the mixture, each time mixing the dough with rubber spatula until homogeneous consistence.
  • 5. Knead soft elastic dough. Cover the bowl with the dough with a dry towel or food wrap and leave it for 30 minutes.
  • 6. Meanwhile, let’s make a filling. Peel fresh pumpkin and apples, remove the seeds and cut into small cubes. Put the ground fruit in a deep frying pan with melted butter. Add 100 g sugar and ground cinnamon.
  • 7. Stir periodically and fry apples with pumpkin on low fire until soft. During preparation, the liquid from the frying pan should completely evaporate and the filling should caramelize. Cool the finished filling to room temperature.
  • 8. Divide cottage cheese dough into 4 parts. Roll one part of the dough into a circle 3-4 mm thick. Cut the circle into 4 segments. With the help of a shaped knife let’s make cuttings on preparations, as in the photo.
  • 9. In the middle of each preparation let’s put a tablespoon of filling.
  • 10. In turn wrap the edges of the preparations, forming fine layers with filling inside.
  • 11. Shift the preparations on the baking sheet, covered with parchment paper.
  • 12. Send the turnovers to the oven pre-heated to 180 degrees. Bake the pastry for 25-30 minutes until delicious golden shade.
  • 13. Cool ready turnovers to room temperature, decorate with sugar powder and serve with tea or coffee.
