Sweet potato rice Recipe

What You’ll Need:

  • Pot or Rice Cooker
  • Spoon
  • Bowl
  • Knife
  • Baking Sheet

 

Main Ingredients:

  • 1-2 Sweet Potatoes (Mine were quite large so I only ended up needing one)
  • 1 Cup of Rice (Brown rice or white rice are fine.)
  • Water

Seasoning Sauce Ingredients:

  • 1/2 Cup of Chopped Green Onions (Usually made with Asian chives but feel free to substitute.)
  • 1 Tablespoon of Minced Garlic
  • 1/4 Cup of Soy Sauce
  • 1 Teaspoon of Honey
  • 1 Tablespoon of Vinegar (I only had apple cider vinegar so I used 1 teaspoon.)
  • 1 Teaspoon of Hot Pepper Flakes
  • 1 Tablespoon of Sesame Seeds

Directions:

  1. If using a rice cooker, go ahead and wash your prep your rice. This involves swishing the rice around in water and draining out the water about 3-5 times. Once that is finished you can add 1 cup of water to your rice and put it into the rice cooker and hit cook.
    1. Don’t have a rice cooker? No problem! Go ahead and wait until after the sweet potatoes are roasted to boil your rice. Most bagged rice only takes 10 minutes to cook.
  2. Preheat the oven for 350 degrees.
  3. Peel your sweet potatoes, cut into 1 inch cubes and then rinse them off.
  4. Prepare to bake your sweet potatoes. For easy clean up I lined my small baking pan with tin foil, added my sweet potato cubes, and drizzled some olive oil on top.
  5. Allow your potatoes to bake for around 20 minutes. Occasionally checking to see if they are soft.
  6. If you aren’t using a rice cooker then go ahead and start prepping your boiled rice after 15 minutes have passed.
  7. Once your rice is ready you can go ahead and prepare the seasoning sauce by simply combining all of the listed ingredients in a bowl. Save some of the green parts of the onions to top your dish (Don’t throw them away!)
  8. Remove the sweet potatoes from the oven and check that they are soft enough to eat.
  9. Add the rice to the bowl/bowls for serving, add the sweet potatoes on top followed by the seasoning sauce and the extra green onion garnish.
  10. Congrats! You have now made a Korean dish! Dig in!
