Bacon Ranch Chicken Bake

Ingredients
for 4 servings

3 chicken breasts
salt, to taste
pepper, to taste
6 tablespoons ranch dressing
6 slices bacon
4 oz cheddar cheese

Preparation

  1. Preheat oven to 400˚F (200˚C).
  2. Place chicken breast in a baking dish. Season chicken with salt and pepper, to taste.
  3. Spread 1-2 Tbsp. ranch on each chicken breast.
  4. Layer two slices of bacon on top of each chicken breast.
  5. Top with cheese.
  6. Bake for 40 minutes.
  7. Enjoy!


Cheddar Bacon Ranch Burger Bowls

Ingredients
for 6 servings

1 ½ cups shredded cheddar cheese
½ cup bacon, cooked, cut into pieces
2 jalapeñoes, minced
½ cup ranch dressing
2 lb ground beef
1 teaspoon salt
2 teaspoons pepper
6 burger buns
12 pieces lettuce

Preparation

  1. Combine cheese, bacon pieces, jalapeños, and ranch in a bowl. Stir together and refrigerate.
  2. Season the ground beef with salt and pepper in a large bowl, and mix in with your hands.
  3. Grab a baseball-sized piece of beef. Roll it with your hands into a ball and place on a parchment lined baking tray.
  4. Using a clean, empty soda or beer can, press the ball of beef around the can to create a bowl. Make sure to smooth out any cracks.
  5. Fill the bowls with the cheddar mixture and refrigerate for 2 hours.
  6. Preheat the grill to 350˚F (175˚C).
  7. Cook burger bowls over indirect heat for 25-30 minutes.
  8. Serve with or without a bun with your favorite toppings.

Chicken Cobb Salad With Homemade Ranch

Ingredients
for 6 servings

2 boneless, skinless chicken breasts
salt, to taste
black pepper, to taste
1 large head romaine lettuce, chopped
½ red onion, thinly sliced
1 ½ cups cherry tomato, halved
1 avocado, diced
3 eggs, hard boiled, peeled, and diced
8 strips bacon, cooked and crumbled
HOMEMADE RANCH

1 cup greek yogurt
⅓ cup milk
1 tablespoon white vinegar
2 tablespoons fresh parsley, minced
2 teaspoons fresh dill, minced
¼ teaspoon onion powder
⅛ teaspoon garlic powder
½ teaspoon black pepper
salt, to taste

Preparation

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, combined the Greek yogurt, milk, vinegar, parsley, dill, onion powder, garlic powder, black pepper, and salt and mix until smooth. Set aside.
  3. Place the chicken on a greased roasting tray and season both sides with salt and pepper.
  4. Bake for 20 minutes, or until the chicken is cooked through and the juices run clear.
  5. Let the chicken rest for 5 minutes before dicing.
  6. In a large serving bowl, combine the romaine lettuce, red onion, cherry tomatoes, diced chicken, avocado, eggs, and bacon. Pour desired amount of ranch dressing over the salad and toss.
  7. Portion the salad among serving bowls and top with more dressing, if desired.

Cheddar Ranch Chicken Strips

Ingredients
for 5 servings

2 chicken breasts
2 ½ cups buttermilk
1 packet ranch dressing mix
3 cups cheese cracker

Preparation

  1. Preheat oven to 425˚F (225˚C).
  2. On a cutting board, slice chicken breasts against the grain into strips.
  3. Place the chicken strips in a bowl and add in buttermilk and ranch packet. Stir until well-coated.
  4. Cover the bowl with plastic wrap and place in the refrigerator for at least an hour.
  5. Pour cheese crackers into a resealable bag and crush with a rolling pin until they become finely ground.
  6. Open the bag and place a marinated piece of chicken in the cracker crumbs. Coat the chicken with the crumbs and place on a parchment paper-lined baking sheet.
  7. Bake for 20 minutes, flipping halfway.
  8. Enjoy!
