Sweet Potato Salad
Enjoy your tasty Sweet Potato Salad!
Ingredients:
For the Salad:
- 3 medium-sized sweet potatoes, peeled and diced into bite-sized cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- Roast Sweet Potatoes:
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes or until the sweet potatoes are tender and slightly caramelized.
- Prepare Dressing:
- While the sweet potatoes are roasting, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper to create the dressing. Adjust the seasoning to taste.
- Assemble Salad:
- In a large bowl, combine the roasted sweet potatoes, halved cherry tomatoes, chopped red onion, and fresh parsley.
- Add Dressing:
- Pour the dressing over the salad and gently toss until everything is well coated.
- Optional: Add Feta:
- If you're using feta cheese, sprinkle it over the salad.
- Chill (Optional):
- You can refrigerate the salad for a couple of hours to let the flavors meld, or serve it immediately.
- Serve:
- Garnish with additional parsley if desired. Serve the sweet potato salad chilled or at room temperature.
