Ingredients:
- 1 cup semolina (sooji/rava)
- 1/2 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water
- 1/2 cup milk
- 1/4 teaspoon cardamom powder
- Chopped nuts for garnish (e.g., almonds, cashews)
Steps:
- In a pan, heat ghee over medium heat.
- Add semolina to the ghee and roast it until it turns golden brown, releasing a nutty aroma. Keep stirring to ensure even roasting.
- In a separate saucepan, combine water and sugar. Heat this mixture until the sugar dissolves, creating a sugar syrup.
- Gradually add the sugar syrup to the roasted semolina while stirring continuously to avoid lumps.
- Carefully pour in the milk, continuing to stir the mixture.
- Add cardamom powder for flavor and continue to cook the sheera over low to medium heat.
- Keep stirring until the sheera thickens and starts to leave the sides of the pan. The semolina should be well-cooked and have a smooth consistency.

- Quickly pour the caramel into the sheera and stir to incorporate the caramel flavor throughout.
