Roasted Eggplant Fan

So today I suggest preparing fans from eggplants baked in an oven with tomatoes and hard cheese. The hot snack according to this recipe is very tasty, fragrant and nourishing.   • 1. Wash eggplants and cut lengthwise into halves without cutting off the vegetables tails. Cut each half of the eggplant lengthwise into 1 cm wide strips without cutting the vegetables at the base.
  • 2. Salt the received preparations, season with black ground pepper and leave for 15 minutes. Then wash vegetables under cold water, dry and put them on a baking sheet covered with parchment paper, forming a fan from them.
  • 3. Wash fresh tomatoes and cut into thin semi-rings. Cut hard cheese with thin slices.
  • 4. Insert a thin slice of cheese and a slice of fresh tomato into each cut of eggplants. In this way let’s form all 4 fans from eggplants.
  • 5. In a separate dish let’s mix sour cream, finely chopped greenery and garlic cloves passed through the press. Add salt and black ground pepper to taste, mix the mixture until homogeneous consistence.
  • 6. Grease our eggplant fans with the obtained sour cream-garlic mixture.
  • 7. Let's send vegetables to a pre-heated up to 180 degrees oven. Bake the vegetables for 35-40 minutes. During this time, the eggplants must be fully prepared and reddened. Serve the ready dish in hot form, decorated with fresh greenery.
