Thin Crepes on Kefir

I think many hostesses prepare gentle choux crepes on kefir. Today I decide to diversify the usual way of making crepes and make thin crepes on kefir with holes. Crepes are gentle, spongy and very tasty. They are easy to turn over, they do not stick to the frying pan and remain soft for a long time. Crepes on kefir can be served as dessert with sour cream, condensed milk, jam or melted chocolate. Also, such crepes can be stuffed with sweet (cottage cheese, fresh berries and fruits) or salty filling (hard cheese, mushrooms, ham, meat, salmon, liver) to your taste.

  • Kefir
    500 ml
  • Egg
    3 pcs
  • Whole wheat flour
    5 tbsp
  • Sugar
    1 tbsp
  • Salt
    0.5 tsp
  • Baking soda
    0.5 tsp
  • Vegetable oil
    1 tbsp


  • 1. Break 3 chicken eggs in deep bowl. Add sugar, salt and soda.
  • 2. Mix the mixture with wire whisk to homogeneous consistence.
  • 3. Add 250 ml of room temperature kefir to the egg mixture. Stir the mixture with a wire whisk.
  • 4. Add sifted wheat flour into the dough, mix thoroughly.
  • 5. Then add the remaining kefir into the dough, stick to the recipe for thin crepes with holes on kefir.
  • 6. So that the crepes on the kefir are elastic and do not stick to the surface of the frying pan, add a tablespoon of vegetable oil to the dough. Mix the dough, achieving homogeneous consistence. Cover the bowl with a crepe batter with a dry towel and leave it for 15 minutes to rest.
  • 7. Heat the frying pan for crepes and grease it with vegetable oil, using a culinary brush. Pour a small amount of batter onto the frying pan. Rotate the frying pan in circular movements, distribute the batter over the entire surface of the frying pan.
  • 8. When the edges of the crepe begin to redden, carefully turn the crepe on the other side and bring it to readiness.
  • 9. Thus, let’s fry all thin and very gentle crepes on the kefir. From the specified number of ingredients, I got 16 crepes with a diameter of 22 cm.
