Chilli Coriander Fried Rice |

Ingredients
2 cups Basmati rice
3 cloves Garlic , finely chopped
2 Thai Red chilli (Birds Eye Chilli) , finely chopped
1 Green Chilli , finely chopped
1/4 teaspoon Black pepper powder
1 teaspoon Soy sauce
1/4 cup Carrots , finely chopped
1/4 cup Cabbage , finely chopped
1/4 cup Spring Onions (Scallion) , finely chopped
1/4 cup Coriander leaves (Dhania) , finely chopped
1 teaspoon Cooking oil , for cooking
Salt , to taste

Directions for Chilli Coriander Fried Rice Recipe

  1. To begin making the Chilli Coriander Fried Rice Recipe, wash the rice and soak the rice in 3 cups of water for 30 minutes.
  2. Drain the water. Transfer the rice to a cooking pan and cook with 4 cups of water, salt and 2 tablespoons of oil.
  3. Simmer it covered for 15 minutes or until you see the water has been absorbed by the rice.
  4. Turn off the heat at this point. Note The rice should not be over cooked, has to be 90% cooked.
  5. Allow the rice to cool completely. For chinese rice, a rice that is made a day old is better, as it has the perfect texture.
  6. Heat oil in a wok; add the garlic, spring onions, carrots and cabbage. Stir fry on high heat for a few minutes. Add the chillies and saute for a few more minutes.
  7. Now finally add the soy sauce, coriander leaves, salt and rice. Mix well. Check taste and adjust the spices and salt accordingly.
  8. Serve the Chilli Coriander Fried Rice Recipe.
