Ingredients

For Ginger Garlic Paste

  • 2 Green chillies (less spicy) рд╣рд░реА рдорд┐рд░реНрдЪ
  • 4-5 Garlic cloves, рд▓рд╣рд╕реБрди
  • ┬╜ inch Ginger, peeled, slice, рдЕрджрд░рдХ

For Onion Tomato Masala

  • 2 tbsp Oil, рддреЗрд▓
  • ┬╜ tsp Cumin seeds, рдЬреАрд░рд╛
  • 2 medium size Onion, chopped, рдкреНрдпрд╛рдЬ
  • Prepared Ginger Garlic Paste, рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдХрд╛ рдкреЗрд╕реНрдЯ
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • 1 tsp Degi red chilli powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • ┬╜ tbsp Coriander powder, рдзрдирд┐рдпрд╛ рдкрд╛рдЙрдбрд░
  • 1 large fresh Tomato, chopped, рдЯрдорд╛рдЯрд░
  • 1 ┬╝ cup Tomato puree, рддрд╛рдЬрд╝реЗ рдЯрдорд╛рдЯрд░ рдХреА рдкреНрдпреВрд░реА

For Kadhai Masala

  • 1 tsp Cumin seeds, рдЬреАрд░рд╛
  • 1 ┬╜ tbsp Coriander seeds, рдзрдирд┐рдпрд╛ рдХреЗ рдмреАрдЬ
  • ┬╝ tsp Fennel seeds, рд╕реМрдВрдл
  • 1 ┬╜ tbsp Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • 1 Green cardamom, seeds, рд╣рд░реА рдЗрд▓рд╛рдпрдЪреА рдХреЗ рджрд╛рдиреЗ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 tbsp Red chilli flakes, рдХреБрдЯреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪреА
  • 1 ┬╜ tbsp Dry fenugreek leaves, рдХрд╕реВрд░реА рдореЗрдереА

For Tempering

  • 1 ┬╜ tbsp Oil, рддреЗрд▓
  • 300 gms button Mushroom, cut into half, рдорд╢рд░реВрдо
  • 1 Onion, cut into dice, рдкреНрдпрд╛рдЬ
  • ┬╜ Capsicum, cut into dice, рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ Tomato, cut into dice, рдЯрдорд╛рдЯрд░
  • Prepared Onion Tomato Masala, рддрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдкреНрдпрд╛рдЬ рдЯрдорд╛рдЯрд░ рдорд╕рд╛рд▓рд╛
  • Little water, рдкрд╛рдиреА
  • ┬╜ tbsp Prepared Kadhai Masala, рддрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдХрдбрд╝рд╛рд╣реА рдорд╕рд╛рд▓рд╛
  • ┬╜ tbsp Coriander leaves, roughly chopped, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

For Garnish

  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

Ginger Garlic Paste

  1. In a mortar pestle, add garlic cloves, ginger, green chillies and make a coarse paste.
  2. Keep aside for further use.

For Onion Tomato Masala

  1. In a kadai or a pan, add oil, once it's hot, add cumin seeds and let it splutter.
  2. Add onion and saute it until translucent, add prepared ginger garlic paste, saute for 1-2 minutes.
  3. Add turmeric powder, degi red chili powder, coriander powder and saute for a minute.
  4. Add tomatoes, tomato puree and let it cook for a while.

For Kadhai Masala

  1. In a pan, add cumin seeds, coriander seeds, fennel seeds black peppercorns , green cardamom, salt to taste and dry roast everything well.
  2. Let it cool to room temperature, transfer it to a grinder jar and grind it into a coarse powder.
  3. Add red chili flakes, dry fenugreek leaves and mix well.
  4. Keep it aside for further use.

For Tempering

  1. In a kadai, add oil, once itтАЩs hot, add mushroom and saute it on high flame.
  2. Drain out the water sweated by mushroom, add onion, capsicum, salt to taste and saute for 1-2 minutes. Then add tomatoes and saute it.
  3. Add onion tomato masala and mix everything well.
  4. Add water, dry fenugreek leaves and let it simmer for a while or until thick.
  5. To finish the kadhai mushroom, add fresh coriander leaves and transfer it onto a serving dish.
  6. Garnish it with coriander sprig and serve hot with roti.
