Ingredients:
- 1 block tofu
- salt and pepper
air fry at 180°C for 10-15 minutes
- 250g eggplant
- salt and pepper
- 2-3 tbsp coconut oil
- 2 tbsp cornstarch

Sauce:
- 3 tbsp coconut aminos
- 1/2 cup mushroom stock
- 1 tbsp vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch
Saute:
- 2 tbsp coconut oil
- 5 cloves garlic
- 1 red onion
- 1 medium bellpepper
Garnish:
- spring onion
- sesame seeds
