Zucchini tortillas
INGREDIENTS
- 2 zucchini
- 2 eggs
- 60g (1/2 cup) of breadcrumbs
- 1/4 tsp of onion powder
- 1/4 tsp of garlic powder
- 1/4 tsp of salt
- 110g (1/2 cup) of grated cheese
- Cream cheese
- Smoked salmon
METHOD
- Grate the zucchini and transfer them to the bowl. Squeeze them with your hands to remove the excess water.
- Add the eggs, breadcrumbs, onion powder, garlic powder, salt, and grated cheese and mix until is well combined.
- Split the mixture into the 4 parts and create the balls. Transfer the balls into the pan covered with parchment paper and flatten them with your hands to create the tortillas.
- Bake in the oven at 180°C/360°F for 20 minutes. Fill the tortillas with cream cheese and smoked salmon.
