Zucchini tortillas

INGREDIENTS

  • 2 zucchini
  • 2 eggs
  • 60g (1/2 cup) of breadcrumbs
  • 1/4 tsp of onion powder
  • 1/4 tsp of garlic powder
  • 1/4 tsp of salt
  • 110g (1/2 cup) of grated cheese
  • Cream cheese
  • Smoked salmon

METHOD

  1. Grate the zucchini and transfer them to the bowl. Squeeze them with your hands to remove the excess water.
  2. Add the eggs, breadcrumbs, onion powder, garlic powder, salt, and grated cheese and mix until is well combined.
  3. Split the mixture into the 4 parts and create the balls. Transfer the balls into the pan covered with parchment paper and flatten them with your hands to create the tortillas.
  4. Bake in the oven at 180°C/360°F for 20 minutes. Fill the tortillas with cream cheese and smoked salmon.
