Crunchy Rice with Spicy Fillings is a dish that combines crispy rice with a flavorful and spicy filling. It's a delicious and unique way to enjoy rice, and it offers a delightful contrast of textures and flavors.\
Ingredients:
- 2 cups long-grain rice
- Water for cooking rice
- Vegetable oil for frying
- Salt to taste
For the Spicy Filling:
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red chili pepper, finely chopped (adjust amount based on desired spice level)
- 1/2 pound ground chicken or beef
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce (such as Sriracha)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Chopped fresh cilantro or green onions for garnish
Instructions:
- Cook the rice: Rinse the rice under cold water until the water runs clear. Cook the rice according to the package instructions, using water and salt. Once cooked, spread the rice out on a baking sheet or large tray and let it cool and dry for about 30 minutes.
- Shape the rice patties: Take a handful of cooled rice and shape it into a patty, pressing it firmly together. Repeat with the remaining rice.
- Pan-fry the rice patties: Heat a non-stick pan or skillet over medium heat and add enough vegetable oil to cover the bottom of the pan. Place the rice patties in the pan and cook for about 3-4 minutes on each side, or until they become golden brown and crispy. Press them down gently with a spatula while cooking. Once done, transfer the rice patties to a plate lined with paper towels to absorb any excess oil.
- Prepare the spicy filling: In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and red chili pepper. Sauté until the onion becomes translucent and the chili pepper is fragrant.
- Add the ground chicken or beef to the pan and cook until browned and cooked through. Break up the meat into smaller pieces while cooking.
- Add the soy sauce, chili sauce, ground cumin, ground coriander, salt, and pepper to the pan. Stir well to coat the meat and let it cook for another 2-3 minutes to allow the flavors to meld together. Remove from heat.
- Assemble the dish: Take a crispy rice patty and carefully create a small indentation or pocket in the center using a spoon or your fingers. Fill the pocket with a spoonful of the prepared spicy filling. Repeat this step with the remaining rice patties and filling.
- Garnish and serve: Sprinkle the Crunchy Rice with Spicy Fillings with chopped fresh cilantro or green onions for added freshness and flavor. Serve them warm as a delicious and spicy snack or appetizer.
