Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Optional toppings: sesame seeds, chopped green onions

Instructions:

  1. In a bowl, whisk together soy sauce, mirin, honey, rice vinegar, minced garlic, and grated ginger to make the teriyaki sauce.
  2. Slice the chicken breasts into thin strips or bite-sized pieces.
  3. In a large skillet or wok, heat some oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes.
  4. Pour the teriyaki sauce over the cooked chicken in the skillet. Reduce the heat to medium and let the sauce simmer for a few minutes, allowing it to thicken slightly and coat the chicken.
  5. In a small bowl, mix together the cornstarch and water to make a slurry. Add the slurry to the skillet and stir well, allowing the sauce to thicken further.
  6. Cook for an additional minute or two until the sauce reaches the desired consistency. The sauce should be glossy and coat the chicken evenly.
  7. Remove from heat and let the chicken teriyaki rest for a minute or two.
  8. Serve the chicken teriyaki over steamed rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
