Hakka Noodles
Hakka Noodles is a popular Indo-Chinese dish that combines Chinese-style noodles with Indian flavors and spices. It is a stir-fried dish typically made with boiled noodles, mixed vegetables, and a variety of sauces.
Ingredients:
- 200 grams Hakka noodles (or any other noodles of your choice)
- 2 tablespoons oil
- 3-4 cloves of garlic, minced
- 1-inch piece of ginger, finely chopped
- 1 small onion, thinly sliced
- 1 medium carrot, julienned
- 1 small bell pepper (capsicum), thinly sliced
- 1/2 cup shredded cabbage
- 1/4 cup spring onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 teaspoon chili sauce (adjust according to your spice preference)
- 1/2 teaspoon black pepper powder
- Salt to taste
Instructions:
- Cook the noodles according to the package instructions until they are al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Toss the noodles with a little oil to prevent sticking and set them aside.
- Heat oil in a wok or large pan over high heat.
- Add minced garlic and chopped ginger to the hot oil and stir-fry for a few seconds until fragrant.
- Add sliced onions and stir-fry for a minute until they turn translucent.
- Add julienned carrots, sliced bell pepper, and shredded cabbage. Stir-fry the vegetables for 2-3 minutes until they are slightly cooked but still retain their crunch.
- Push the vegetables to one side of the pan and add the cooked noodles to the empty space. Toss the noodles gently to separate them and mix them with the vegetables.
- In a small bowl, mix together soy sauce, vinegar, chili sauce, black pepper powder, and salt.
- Pour the sauce mixture over the noodles and vegetables. Mix everything well to ensure that the sauce coats the noodles evenly.
- Stir-fry the noodles and vegetables for another 2-3 minutes, tossing them constantly to prevent sticking and to distribute the flavors.
- Add chopped spring onions and give it a final toss.
- Remove from heat and serve the Hakka Noodles hot.
You can customize the dish by adding other vegetables like mushrooms, snow peas, or bok choy, or by adding diced tofu, paneer, or chicken for added protein. Hakka Noodles can be enjoyed as a main course or as a side dish with your favorite Indo-Chinese gravies or stir-fries.
