Fabulously Easy Fried Rice

Fabulously Easy Fried Rice is a quick and tasty dish that can be prepared using leftover rice and a few simple ingredients. It's a versatile recipe that allows you to customize it according to your preferences and the ingredients you have on hand.

Ingredients:

  • 3 cups cooked rice (preferably cold or day-old rice)
  • 2 tablespoons oil (vegetable or sesame oil works well)
  • 1 cup mixed vegetables (such as carrots, peas, corn, and diced bell peppers)
  • 2-3 cloves garlic, minced
  • 2-3 green onions, chopped
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce (adjust to taste)
  • Salt and pepper to taste

Optional Additions:

  • Cooked meat or shrimp (chicken, beef, pork, or shrimp)
  • Diced tofu or tempeh for a vegetarian option
  • Sesame seeds or chopped cilantro for garnish

Instructions:

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and chopped green onions to the hot oil and sauté for about 1 minute until fragrant.
  3. Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are slightly tender.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Allow the eggs to cook for a few seconds until they start to set.
  5. Stir the eggs gently to scramble them, and once they are mostly cooked, mix them with the vegetables.
  6. Add the cooked rice to the skillet and stir-fry everything together, breaking up any clumps of rice with a spatula or wooden spoon.
  7. Drizzle the soy sauce over the rice and continue stir-frying for another 2-3 minutes until the rice is heated through and well coated with the sauce.
  8. Season with salt and pepper to taste. Remember that soy sauce is already salty, so adjust the seasoning accordingly.
  9. If you're adding any cooked meat or shrimp, now is the time to incorporate them into the fried rice. Stir until everything is well combined and heated through.
  10. Remove the skillet from heat and garnish with sesame seeds or chopped cilantro if desired.
