Fabulously Easy Fried Rice
Fabulously Easy Fried Rice is a quick and tasty dish that can be prepared using leftover rice and a few simple ingredients. It's a versatile recipe that allows you to customize it according to your preferences and the ingredients you have on hand.
Ingredients:
- 3 cups cooked rice (preferably cold or day-old rice)
- 2 tablespoons oil (vegetable or sesame oil works well)
- 1 cup mixed vegetables (such as carrots, peas, corn, and diced bell peppers)
- 2-3 cloves garlic, minced
- 2-3 green onions, chopped
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce (adjust to taste)
- Salt and pepper to taste
Optional Additions:
- Cooked meat or shrimp (chicken, beef, pork, or shrimp)
- Diced tofu or tempeh for a vegetarian option
- Sesame seeds or chopped cilantro for garnish
Instructions:
- Heat the oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and chopped green onions to the hot oil and sauté for about 1 minute until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are slightly tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Allow the eggs to cook for a few seconds until they start to set.
- Stir the eggs gently to scramble them, and once they are mostly cooked, mix them with the vegetables.
- Add the cooked rice to the skillet and stir-fry everything together, breaking up any clumps of rice with a spatula or wooden spoon.
- Drizzle the soy sauce over the rice and continue stir-frying for another 2-3 minutes until the rice is heated through and well coated with the sauce.
- Season with salt and pepper to taste. Remember that soy sauce is already salty, so adjust the seasoning accordingly.
- If you're adding any cooked meat or shrimp, now is the time to incorporate them into the fried rice. Stir until everything is well combined and heated through.
- Remove the skillet from heat and garnish with sesame seeds or chopped cilantro if desired.
- Serve the Fabulously Easy Fried Rice hot as a main dish or as a side with your favorite Asian-inspired meal.
