Fluffy and moist Blueberry Muffins

Ingredients

cup Size Volume : 1cup 70ml  12 Cakes

  • 2Eggs(120g w/o shell)
  • 100g Sugar
  • 200g Heavy cream
  • 140g Flour
  • 40g Almond flour
  • 5g Baking powder
  • 100g Frozen blueberries

【Directions】

Preparation:

Preheat the oven to 180℃

①Mix eggs and granulated sugar well

②Add heavy whipping cream and mix.

③Sift ingredients ().Mix until no flour remains.

④Transfer the batter into a piping bag.

Line a muffin tin with paper liners and pipe the batter into the liners.

⑤ First, put a small amount of dough into the mold. Add about three blueberries and then pour more dough on top. Place three blueberries on the top.

⑥ Bake in a 180°C oven for 20 minutes, and it's ready.

⑦ Immediately remove from the mold and let it cool on a cake cooler. Once it's cooled down, place it in a plastic bag or similar to prevent it from drying out.
