Breakfast Bake
Ingredients
for 12 servings
1 tablespoon oil
1 lb bacon, cooked, drained, and diced
1 tomato, diced
1 cup broccoli floret, finely chopped
2 cups potato hash brown
2 cups shredded cheddar cheese
1 cup pancake mix
4 eggs
2 cups milk, of choice
½ teaspoon pepper
¼ teaspoon salt
scallion, thinly sliced, for serving
Preparation
1. Preheat oven to 400°F (200°C).
2. Place the bacon, tomato, and broccoli in greased casserole dish.
3. Sprinkle hash browns and cheese on top.
4. In a large bowl, whisk together pancake mix, eggs, milk, salt, and pepper.
5. Pour pancake mixture over ingredients in the casserole dish.
6. Bake for 45 minutes.
7. Let cool for 5 minutes before serving.
8. Top with scallions, and serve.
9. Enjoy!
Slow Cooker Apple Cobbler
Ingredients
for 6 servings
4 granny smith apples, peeled, cored, and sliced
½ cup pancake mix
⅔ cup quick oat
¾ cup brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon ground clove
¼ teaspoon salt
2 teaspoons lemon juice
½ cup butter, melted
ice cream, to serve
Preparation
1. Spray bottom of slow cooker with cooking spray.
2. Peel and slice apples. Place them in the bottom of a slow cooker.
3. In a bowl, add the pancake mix, oats, brown sugar, cinnamon, nutmeg, ground cloves, salt, and lemon juice, and stir to combine.
4. Pour pancake and oat mixture over apples.
5. Drizzle the melted butter over the top of the pancake and oat mixture.
6. Cook on high for 2½ hours. For a crispy top, crack the lid for the last 15-30 minutes of cooking.
7. Serve with ice cream, if desired.

Pizza Muffins
Ingredients
for 12 servings
2 cups pancake mix
½ cup butter, melted
3 eggs, divided
½ tablespoon dried basil
½ tablespoon dried oregano
½ teaspoon garlic powder
⅓ cup mini pepperoni slice
1 cup shredded mozzarella cheese
1 cup milk, of choice
18 cherry tomatoes, or grape tomato
2 tablespoons heavy cream
2 tablespoons grated parmesan cheese
marinara sauce, for serving
Preparation
1. Preheat oven to 350°F (190°C).
2. In a medium bowl, add the pancake mix, butter, and 1 egg and mix until combined.
3. Press about 1 tablespoon of dough into a greased 12-portion muffin pan.
4. Sprinkle basil, oregano, garlic powder, pepperoni, mozzarella cheese, and tomatoes over the dough.
5. In a large measuring cup, whisk together 2 eggs, milk, and heavy cream. Pour mixture over the other ingredients in each muffin slot. 6. Top with parmesan cheese.
7. Bake 20-25 minutes, or until golden brown.
8. Cool for 5 minutes.
9. Serve with marinara sauce for dipping.

Pancake Mix Brownies
Ingredients
for 12 servings
¼ cup butter, melted
2 tablespoons sugar
2 eggs
1 teaspoon vanilla extract
½ cup semi sweet chocolate, melted
1 ½ tablespoons cocoa powder, sifted
⅓ cup pancake mix, sifted
⅓ cup dark chocolate, chopped
powdered sugar, to serve
Preparation
1. Preheat the oven to 350˚F (190˚C).
2. Add the butter and sugar to a bowl and stir to combine.
3. Add in the eggs and vanilla extract and whisk to combine until smooth.
4. Stir in the melted chocolate, followed by the cocoa powder and pancake mix, stirring until well combined.
5. Gently fold in the chopped dark chocolate to the batter.
6. Pour batter into a parchment paper-lined 8x8-inch (20x20 cm) pan, and bake for 20-25 minutes.
7. Cool for 5 minutes.
8. Top with powdered sugar, cut, and serve.
9. Enjoy!
