Oatmeal Carrot Cake

Ingredients

7in(18cm)×3in(8cm)loaf pan

For Carrot Cake

  • 2 Eggs 100g
  • 60g Cane sugar(or Granulated sugar)
  • 130g Carrot, grated
  • 80g Milk
  • 100g Oatmeal (Instant Oatmeal)
  • 40g Almond flour
  • 3g Baking powder
  • Cinnamon powder
  • 30g Raisins
  • 30g Walnuts, roasted

For Sprinkle

  • non melting powdered sugar 

Directions

Preparation:

Line the cake pan with parchment paper.

Preheat the oven to 338 °F/170℃.

①Pour hot water onto the raisins to soften. Drain off the hot water.
Cut the walnuts into small pieces.
Grate the carrot coarsely.
②Put eggs in a large bowl and mix well. 
③Add the cane sugar and milk.
Add the carrot and mix well with a spatula.
④Add all of the dry ingredients() and fold until the powderiness disappears.
⑤Add raisins and walnuts, mix.
⑥Pour the batter into a cake tin.
⑦Bake at 338 °F/170℃ for 45 minutes.
⑧Transfer them to a rack to cool down.
