Chicken Kali Mirch

CHICKEN KALI MIRCH

Ingredients

For Masala

  • 1 ½ tbsp, Black peppercorns
  • Salt to taste
  • 1 tsp Shahi jeera

For Marination

  • 400 gms Chicken breast, cut into medium size cubed
  • 1 ½ tsp Ginger Garlic paste
  • 2 tbsp Curd, beaten
  • Salt to taste
  • 2-4 Green chillies (less spicy,finely chopped)
  • ½ tbsp Tender Coriander stems, finely chopped
  • ½ tsp Black peppercorn powder
  • 1 tsp Mayonnaise
  • 1 Egg
  • ⅓ cup Refined flour
  • ⅓ cup Cornstarch
  • ¼ tsp Baking soda
  • 1 Egg white
  • 2 tbsp Oil

For Tempering

  • 1 ½ tsp Oil
  • 2-3 Green chillies, chopped
  • 1 inch Ginger, chopped
  • 2 tbsp Coriander leaves, chopped
  • 1 ½ tbsp Prepared Masala
  • Oil for frying

For Mint Dip

  • 2 tbsp fresh Mint leaves, chopped
  • ½ cup Curd, beaten
  • 1 tbsp Prepared Masala
  • Salt to taste
  • ½ tsp sugar

For Cheese Dip

  • ⅓ cup Mayonnaise
  • ¼ cup Process cheese, grated
  • 1 tsp Chili flakes

For Garnish

  • Coriander sprig
  • Lemon wedge

Process

For Masala

  1. In a pan, add black peppercorns, salt to taste and Shahi jeera.
  2. Roast for 20 to 30 seconds or till fragrant.
  3. Now, transfer it into a mortar pestle and make coarse powder or grind it in a grinder jar and keep it aside for further use.

For Marination

  1. In a bowl, add chicken breast, ginger garlic paste, curd, salt to taste, green chillies, coriander stems.
  2. Add black peppercorns powder, mayonnaise and mariante well. Rest for at least 10-15 minutes.
  3. Add egg, refined flour, cornstarch, baking soda, egg white and mix everything well.
  4. Add oil and mix well.

For Frying

  1. Heat oil in a kadai on medium flame.
  2. Now, fry the marinated chicken on a slow to medium flame till golden in color and cook well from inside.
  3. Remove in an absorbent paper and keep it aside for further use.

For Tempering

  1. Firstly, cut the fried Chicken Kali mirch into half.
  2. Now, in a saucepan, add oil, once it gets hot add fried chicken Kali mirch. Sauté well.
  3. Now, add coriander leaves, green chillies, ginger, sprinkle some prepared masala, salt to taste and toss everything well.
  4. Serve hot with prepared dips and enjoy.

For Mint Dip

  1. In a bowl, add curd, mint leaves, prepared masala, salt to taste, sugar and mix it well.
  2. Keep it aside for further use.

For Cheese Dip

  1. In a bowl, add mayonnaise, grated cheese, chili flakes and mix it well.
  2. Keep it aside for further use.
