These pineapple-shaped tart cookies are soft and tender. They're filled with sweet, tangy homemade pineapple jam. I've adapted my late mother's classic pineapple tart cookies recipe to get this new look. The pineapple tart cookies are famous in Malaysia and its neighbouring countries.
