Cooker Chicken Curry
Ingredients:
- 1.5 lbs (about 700g) chicken pieces, cleaned
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1/4 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1/2 cup coconut milk (optional)
- Fresh coriander leaves for garnish
Instructions:
- Heat vegetable oil in the pressure cooker over medium heat.
- Add finely chopped onions and sauté until they become golden brown.
- Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and the oil begins to separate.
- Mix in turmeric powder, curry powder, ground cumin, ground coriander, red chili powder, and salt. Cook the spices for a couple of minutes to enhance their flavors.
- Add yogurt to the mixture and stir well. Cook for another 2-3 minutes.
- Add cleaned chicken pieces to the cooker and coat them evenly with the spice mixture.
- If using coconut milk, add it at this stage for a creamy texture.
- Close the pressure cooker lid without the weight and cook for about 10-12 minutes or until the chicken is tender.
- Allow the pressure to release naturally, and then open the lid.
- Garnish with fresh coriander leaves.
- Serve the Cooker Chicken Curry with rice, naan, or your preferred choice of bread.
