Stewed Cabbage with Mushrooms

Stewed cabbage combines perfectly with fried mushrooms. Despite the fact that there is no meat in the recipe, the dish is hearty and nutritious. Pre-frying cabbage and mushrooms gives each ingredient a saturated and bright taste. Stewed cabbage with mushrooms diversifies the fasting and vegetarian menu. It can be served as a side dish for meat or used as a filling for open pies or yeast cakes. Fresh champignons can be replaced with oysters, butters, birch or white mushrooms. For the recipe, it is best to use white cabbage of late winter types. Young salad or marinated cabbage is not suitable for this dish.

Ingredients

  • Cabbage
    700 g
  • Champignon
    350 g
  • Carrot
    1 pcs
  • Onion
    2 pcs
  • Tomato paste
    2 tbsp
  • Water
    100 ml
  • Vegetable oil
    50 ml
  • Italian herb
    1 tsp
  • Dill
    25 g
  • Salt
    - to taste
  • Black pepper
    - to taste

Steps

  • 1. From white cabbage, remove the upper leaves and cut out the stalk. Cut the cabbage into thin straws.
  • 2. Wash carrots, peel them and grind on a large grater. Add grated carrots to cabbage. Crumple the vegetables with hands so that they let the juice.


  • 3. Then put the vegetables in a deep frying pan with pre-heated vegetable oil. Stir periodically and fry cabbage with carrots on medium heat for 10 minutes.
  • 4. Then add onions, cut into small cubes, to the vegetables. Stir and continue to fry the vegetables together for another 5-7 minutes.


  • 5. When the cabbage becomes soft, add tomato paste to it so that the cabbage stewed with mushrooms gets a piquant sour-sweet note.
  • 6. Stir periodically and fry vegetables on low heat for another 2-3 minutes.
  • 7. Peel fresh champignons, if necessary. Cut the mushrooms into large slices, put in a separate frying pan with pre-heated vegetable oil. Stir periodically and fry champignons to a light golden brown.
  • 8. Add fried mushrooms to cabbage with vegetables, mix. Let's add some water in the frying pan. Cover the frying pan with a lid and stew cabbage with mushrooms on a low heat for 5-7 minutes.
  • 9. At the end of the preparation, add salt and seasonings to taste, mix.
  • 10. Cabbage stewed with mushrooms, the recipe for which I suggest you to cook, is ready. Serve it in hot or cooled form, decorated with fresh dill.
