Potato Chip Cookies

These soft and chewy potato chip cookies are loaded with crunchy chips and plenty of chocolate for the perfect balance of salty and sweet. My recipe is quick and easy to make with NO chilling required!

Ingredients

  • 1 cup unsalted butter, melted and cooled until no longer warm to the touch (226g)
  • 1 cup dark brown sugar, firmly packed (200g)
  • ¾ cup granulated sugar (150g)
  • 2 large eggs, room temperature preferred
  • 1 ½ teaspoons vanilla extract
  • 3 cups all-purpose flour (375g)
  • 1 teaspoon cornstarch
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¾ teaspoon table salt
  • 2 cups roughly broken potato chips (measure after crushing) (92g) (use classic/plain/salted potato chips, I like to use kettle cooked)
  • 1 cup mini chocolate chips (175g)
  • Sea salt, for sprinkling after baking
