  • 1 tbsp chopped garlic
  • 1 tsp lemon zest
  • Juice from a quartered lemon
  • Salt to taste
  • 5 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp cayenne
  • 1 tbsp cumin
  • 1 tbsp dried dark chilies
  • 1 tbsp espelette (optional)
