Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 7 large eggs, separated
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease and flour a 10-inch tube pan.
  2. In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well to combine.
  3. Make a well in the center of the dry ingredients and add the vegetable oil, egg yolks, water, and vanilla extract. Whisk together until the batter is smooth and well-combined.
  4. In a separate clean bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue to beat until soft peaks form.
  5. Gradually add the sugar while continuing to beat the egg whites on high speed until stiff peaks form. The egg whites should be glossy and hold their shape.
  6. Gently fold the beaten egg whites into the chocolate batter in three separate additions. Use a spatula to carefully fold in the egg whites, making sure to incorporate them fully without deflating the batter.
  7. Pour the batter into the prepared tube pan and smooth the top with a spatula.
  8. Bake in the preheated oven for about 55-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and immediately invert the pan onto a wire rack. Let the cake cool completely in the inverted position. This helps the cake maintain its height and prevents it from sinking.
  10. Once the cake is completely cooled, run a knife around the edges of the pan to release the cake. Gently remove the cake from the pan.
  11. Dust the top of the Chocolate Chiffon Cake with powdered sugar, if desired, before serving.
