Dhaba Style Chicken Do Pyaza is a flavorful and spicy Indian dish that originated from the roadside dhabas (food stalls) in India. Ingredients:
- 500 grams chicken, cut into pieces
- 2 large onions, finely sliced
- 2 tomatoes, finely chopped
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2-3 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 tablespoon red chili powder
- 1 tablespoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil or ghee in a large pan or kadai over medium heat. Add cumin seeds, bay leaf, green cardamom pods, cloves, and cinnamon stick. Sauté for a few seconds until the spices release their aroma.
- Add the sliced onions and sauté until they turn golden brown and caramelized. This may take around 10-12 minutes. Stir occasionally to prevent burning.
- Add ginger-garlic paste and green chilies to the pan. Sauté for a minute until the raw smell of the paste disappears.
- Add the chicken pieces to the pan and cook until they are browned on all sides. This should take about 5-6 minutes.
- Add the chopped tomatoes to the pan and cook until they become soft and mushy.
- Reduce the heat to low and add red chili powder, coriander powder, turmeric powder, and salt. Mix well to coat the chicken with the spices.
- Cover the pan and let the chicken cook in its own juices for about 10 minutes, stirring occasionally to prevent sticking.
- Remove the lid and increase the heat to medium-high. Cook for another 5-7 minutes to reduce the excess liquid and thicken the gravy.
- Sprinkle garam masala over the chicken and mix well.
- Garnish with fresh coriander leaves.
- Serve the Dhaba Style Chicken Do Pyaza hot with naan, roti, or steamed rice.
