Ingredients:

  • 500 grams chicken, cut into pieces
  • 2 large onions, finely sliced

  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil or ghee in a large pan or kadai over medium heat. Add cumin seeds, bay leaf, green cardamom pods, cloves, and cinnamon stick. Sauté for a few seconds until the spices release their aroma.
  2. Add the sliced onions and sauté until they turn golden brown and caramelized. This may take around 10-12 minutes. Stir occasionally to prevent burning.
  3. Add ginger-garlic paste and green chilies to the pan. Sauté for a minute until the raw smell of the paste disappears.
  4. Add the chicken pieces to the pan and cook until they are browned on all sides. This should take about 5-6 minutes.
  5. Add the chopped tomatoes to the pan and cook until they become soft and mushy.
  6. Reduce the heat to low and add red chili powder, coriander powder, turmeric powder, and salt. Mix well to coat the chicken with the spices.
  7. Cover the pan and let the chicken cook in its own juices for about 10 minutes, stirring occasionally to prevent sticking.
  8. Remove the lid and increase the heat to medium-high. Cook for another 5-7 minutes to reduce the excess liquid and thicken the gravy.
  9. Sprinkle garam masala over the chicken and mix well.
  10. Garnish with fresh coriander leaves.
  11. Serve the Dhaba Style Chicken Do Pyaza hot with naan, roti, or steamed rice.
