Veggie Longganisa

Hey Foodies! These Veggie Longganisa are going to become a Sunday breakfast must-have! Made from mushrooms and tofu, they are just as meaty as the traditional Filipino Longganisa (Breakfast Sausage)

Ingredients:

  • 150g mushrooms
  • salt and pepper
  • 200g firm tofu
  • 1/4 cup brown sugar
  • 5 cloves garlic
  • 2 tbsp tomato paste
  • 2 tsp smoked paprika
  • 1 tbsp vinegar
  • 2 tbsp low sodium soy sauce
  • 2 tsp mushroom powder
  • 2 tbsp nutritional yeast
  • salt and pepper to taste
  • 1 cup bread crumbs
  • 2 tbsp potato starch
  • olive oil for pan frying
