Brightly Colored Eggplant with Flavorful Sauce

【Ingredients】

  • 3 Eggplant(approximately 330g)

Flavorful Sauce:

  • 1 tsp Grated garlic
  • 2 tsp Apple vinegar
  • 1.5 tbsp Soy sauce
  • 2 tsp Olive oil
  • 10 Chopped almonds
  • 1.5 tbsp Ground sesame
  • 2 tbsp hopped green onions

【Directions】

①Cut off the stems of the eggplants and wrap them in plastic wrap.

Microwave on 600w for 4-5 minutes.

②Open the plastic wrap and let the eggplants cool.

③While they cool, prepare the aromatic sauce.

Combine all the ingredients marked with a in a bowl and mix well.

④Once the eggplants have cooled, tear them into bite-sized pieces lengthwise with your hands.

⑤Arrange the eggplants on a plate and drizzle the sauce from step 3 over them. Ready to serve!
