4 Lighter Sweet Snacks
Oatmeal Raisin Energy Balls
Ingredients
for 12 balls
½ cup almond flour
1 ½ cups pitted date, chopped
1 cup raisin
⅓ cup almond butter
1 ½ teaspoons ground cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
1 cup rolled oat
Preparation
- Place almond flour and dates in a food processor and pulse until sticky.
- Add the raisins, almond butter, cinnamon, vanilla extract, and salt, and pulse until a sticky dough forms.
- Add 1 tablespoon of water if batter seems too dry.
- Transfer the mixture to a bowl and stir in the rolled oats.
- Roll the mixture into tablespoon-sized balls and let sit at room temperature for 2-4 hours.
- Store in an airtight container for up to 1 week.

Peanut Butter Blueberry Frozen Yogurt Bites
Ingredients
for 6 frozen yogurt bites
1 cup plain greek yogurt, nonfat
1 teaspoon honey
¼ cup peanut butter, plus 2 tablespoons
¼ cup blueberry
Preparation
- In a bowl, add the Greek yogurt and honey and stir to combine.
- Transfer 3 tablespoons of the mixture into 6 lined muffin tins.
- Microwave the peanut butter for 15 seconds. Spoon 1 tablespoon of the softened peanut butter over each yogurt cup.
- Sprinkle blueberries over the yogurt cups.
- Freeze until solid, about 2 hours.

Frozen Yogurt-covered Strawberries
Ingredients
for 4 servings
¾ cup plain greek yogurt, nonfat
1 teaspoon honey
1 tablespoon water
12 strawberries, large
½ cup almond, roasted, unsalted, chopped
Preparation
- Combine Greek yogurt, honey, and water in a small bowl and stir to combine.
- Dip the strawberries into the yogurt mixture, ensuring they are fully coated.
- Dip the yogurt-covered strawberries in the chopped almonds, and place on a parchment paper-lined sheet tray.
- Freeze for 2 hours.

Baked Cinnamon Apple Chips
Ingredients
for 1 serving
1 golden delicious apple, thinly sliced
¼ teaspoon ground cinnamon
1 pinch salt
Preparation
- Preheat oven to 250˚F (120˚C).
- Place apple slices on a parchment paper-lined baking sheet and sprinkle with cinnamon and salt.
- Bake for 40 minutes, until the apples are slightly browned.
- Cool completely before serving.
