Chewy Chocolate Chunk Cookies

Ingredients

6 cookies

  • 50g Granulated sugar
  • 50g Cane sugar (or Brown sugar)
  • 1g Salt
  • 50g Unsalted butter, melted
  • 30g Beaten egg
  • Vanilla extract
  • 80g All-purpose flour
  • 1/3 tsp Baking soda
  • 100g Chocolate chunks

Directions

①Chop chocolate into about 0.6-inch cubes, set aside.
②Make brown butter
In a saucepan, add the butter and melt over medium heat.
Bring the butter to a boil, stirring occasionally.
Once the butter has turned a nice nutty brown, remove from the heat.
Set aside to cool to room temperature.
③In a bowl, add the sugars, salt, beaten egg, and vanilla oil.
Mix well with a whisk.
④Add the brown butter and beat until incorporated.
⑤Sift cake flour, baking soda, together over the mixture.
⑥Add chocolate, and fold it roughly.
⑦Refrigerate for 30 minutes.
Preheat the oven to 350˚F (180˚C).
⑧Divide it into 6 equal pieces and roll each into a ball,
Evenly space the dough 2.7 inches apart from one another on a parchment paper-lined baking sheet.
⑨Bake in a preheated oven for 12-14 minutes.
⑩Let the cookies cool on the baking sheet for 2-3 minutes before transferring to a cooling rack to cool completely.
