Potato bombs

INGREDIENTS

400g of boiled potatoes 500g (4 cups) of bread flour 2 eggs 25ml (2 tbsp) of extra virgin olive oil 7g of dry yeast 50ml (1/4 cup) of water 10g (3/4 tbsp) of salt 100g of cooked ham 100g of cheese Oil for frying

METHOD

  1. In a bowl with the boiled potatoes add the flour, eggs, extra virgin olive oil, dry yeast, water, and salt, and mix until the dough is created. Transfer to a working surface and knead until is smooth.
  2. Transfer the dough into the bowl, cover it and let it rise for two hours.
  3. After time has elapsed transfer the dough to the working surface covered with flour and roll it out with the rolling pin to a thickness of 1/2 cm/
  4. Cut into circles with the mold to the size of 7-8 cm, and stuff them in the center with cooked ham and cheese. Add another circle over the first one, and pinch all the way around to get the donuts.
  5. Fry for 4-5 minutes per side or bake them for 20 minutes at 190°
