Giant Biscoff Biscuit
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- Biscoff spread for filling (optional)
- Additional Biscoff cookies for decoration
Instructions:
- Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, ground cinnamon, and salt. Set aside.
- In a large bowl, cream together softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, beating until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Divide the dough in half and shape each half into a large disc.
- Place one disc on the prepared baking sheet and press it into a round shape, about 1/2 inch thick.
- Optionally, spread a layer of Biscoff spread over the surface of the pressed dough.
- Take the second disc of dough and place it on top, pressing the edges together to seal.
- Use additional Biscoff cookies to create a decorative pattern on top of the giant biscuit.
- Bake in the preheated oven for 20-25 minutes or until the edges are golden brown.
- Allow the Giant Biscoff Biscuit to cool on the baking sheet before transferring it to a wire rack.
- Once completely cooled, slice and share this delightful oversized Biscoff treat.
