Ingredients

Salad:

  • 5 large kale leaves, stemmed and finely chopped
  • 1 Tbsp olive oil
  • 1 tsp kosher salt
  • 12 Brussels sprouts, shaved
  • 1 large cucumber, peeled and diced
  • 2 large carrots, diced
  • 1 cup frozen peas, thawed
  • 3 scallions, white parts only, finely chopped
  • Tortilla chips, for serving (optional)

Dressing:

  • 1 shallot
  • 3 garlic cloves
  • 2 cups spinach
  • 1 cup fresh basil
  • ΒΌ cup olive oil
  • ΒΌ cup rice wine vinegar
  • Juice of 2 lemons
  • ΒΌ cup cashews
  • β…“ cup nutritional yeast
  • 3 scallions, green parts only
