- 12 Brussels sprouts, shaved

- 2 large carrots, diced
- 1 cup frozen peas, thawed
- 3 scallions, white parts only, finely chopped
- Tortilla chips, for serving (optional)
Dressing:
- 1 shallot
- 3 garlic cloves
- 2 cups spinach
- 1 cup fresh basil
- ΒΌ cup olive oil
- ΒΌ cup rice wine vinegar
- Juice of 2 lemons
- ΒΌ cup cashews
- β cup nutritional yeast
- 3 scallions, green parts only
