Creamy Chicken & Mushroom Fettuccine

Creamy chicken and mushroom fettuccine is a delightful pasta dish that combines tender chicken, earthy mushrooms, and a luscious creamy sauce.

Ingredients:

  • 8 ounces (225g) fettuccine pasta
  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 8 ounces (225g) mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta:
    • Cook the fettuccine pasta according to the package instructions until al dente. Drain the cooked pasta and set it aside.
  2. Sauté the chicken and mushrooms:
    • Season the chicken strips with salt and pepper.
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chicken strips to the skillet and cook until they are browned and cooked through. Remove the cooked chicken from the skillet and set it aside.
    • In the same skillet, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are tender and any liquid released by the mushrooms has evaporated. Remove the mushrooms from the skillet and set them aside.
  3. Prepare the creamy sauce:
    • In the same skillet, pour in the chicken broth and bring it to a simmer over medium heat.
    • Add the heavy cream, grated Parmesan cheese, and dried thyme (if using) to the skillet. Stir well to combine the ingredients.
    • Let the sauce simmer for a few minutes until it thickens slightly.
  4. Combine the pasta, chicken, mushrooms, and sauce:
    • Add the cooked fettuccine pasta, sautéed chicken, and mushrooms back to the skillet with the creamy sauce.
    • Toss everything together gently until the pasta is well coated with the sauce and the ingredients are evenly distributed.
    • Cook for an additional 1-2 minutes to heat everything through.
  5. Serve:
    • Divide the creamy chicken and mushroom fettuccine among serving plates.
    • Garnish with chopped fresh parsley for added freshness and flavor.
