Gluten-free Rice Flour Banana Cake

Ingredients

7in(18cm)×3in(8cm)loaf pan

  • 1 Banana (net 110g)
  • 1 tsp Lemon juice
  • 1 Egg(60g w/o shell)
  • 30g Sugar
  • 35g Oil
  • 100g Rice flour
  • 3g Baking powder

【Directions】

Preheat the oven to 180°C.

Line the loaf pan with parchment paper.

①Mash the banana and add lemon juice to make a puree.

②In a separate bowl, mix the rice flour and baking powder.

③Crack the egg into a bowl, add sugar, and mix well.

Gradually add the oil while mixing. It is important to thoroughly mix and emulsify the batter.

④Add the banana puree to the mixture and mix well.

⑤Add the mixture from step ② and mix thoroughly.

⑥Pour the batter into a baking pan lined with parchment paper and bake at 180℃ for 38 minutes.

⑦After baking, let it cool for about 10 minutes, then wrap it with plastic wrap while it's still warm and let it cool completely.

⑧Once cooled to room temperature, cut it into desired pieces.Enjoy!

*Rice flour batter is sensitive to dryness, so be sure to wrap it with plastic wrap or store it in a plastic bag for storage.
