Veg Thukpa Soup

Ingredients

For Noodles Dough

  • 2 cups whole Wheat flour, рдЧреЗрд╣реВрдВ рдХрд╛ рдЖрдЯрд╛

  • 1 ┬╜ tsp Oil (after kneading) рддреЗрд▓

For Thukpa Paste

  • 1 ┬╜ inch Ginger (peeled & roughly chopped) рдЕрджрд░рдХ
  • 1 ┬╜ large Onions, roughly chopped, рдкреНрдпрд╛рдЬ
  • 2 medium Tomato, diced, рдЯрдорд╛рдЯрд░
  • 2 tbsp Tender coriander stems, roughly chopped, рдзрдирд┐рдпрд╛ рдХреЗ рдбрдВрдард▓
  • 5-6 no. fresh Red chillies, рддрд╛рдЬрд╝рд╛ рд▓рд╛рд▓ рдорд┐рд░реНрдЪ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 tsp Sesame oil, рддрд┐рд▓ рдХрд╛ рддреЗрд▓

Other Ingredients

  • 1-2 tbsp Flour (for dusting) рдореИрджрд╛

For Thukpa

  • 2 tsp Oil, рддреЗрд▓
  • Prepared Paste, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдкреЗрд╕реНрдЯ
  • 10-12 no. Mushrooms, sliced, рдорд╢рд░реВрдо
  • 2 medium Carrot, julienned, рдЧрд╛рдЬрд░
  • ┬╜ small Cabbage, julienned, рдкрддреНрддрд╛ рдЧреЛрднреА
  • 4-5 cups Vegetable stock, рд╡реЗрдЬрд┐рдЯреЗрдмрд▓ рд╕реНрдЯреЙрдХ
  • Prepared fresh Noodles, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдлреНрд░реЗрд╢ рдиреВрдбрд▓реНрд╕
  • 8-10 no. French beans, diagonally cut, рдлреНрд░реЗрдВрдЪ рдмреАрдВрд╕
  • ┬╝ cup Spring onion, chopped, рдкреНрдпрд╛рдЬрд╝ рдкрддреНрддрд╛
  • ┬╜ tsp Vinegar, рд╕рд┐рд░рдХрд╛
  • 2 tsp Sesame oil, рддрд┐рд▓ рдХрд╛ рддреЗрд▓

For Boiling Noodles

  • 1 ltr Water, рдкрд╛рдиреА
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 pkt Noodles, рдиреВрдбрд▓реНрд╕
  • 1 tsp Oil, рддреЗрд▓

For Chili Oil

  • тЕУ cup Oil, рддреЗрд▓
  • 3-4 no. Garlic cloves, roughly crushed, рд▓рд╣рд╕реБрди
  • 2 tsp Toasted white Sesame seeds, рд╕рдлреЗрдж рддрд┐рд▓
  • 2 tbsp Chili flakes, рдХреБрдЯреА рд╣реБрдИ рд▓рд╛рд▓ рдорд┐рд░реНрдЪ
  • 1 tbsp Light soy sauce, рд╕реЛрдпрд╛ рд╕реЙрд╕

For Assembling

  • Cooked Thukpa, рдкрдХрд╛ рд╣реБрдЖ рдереБрдХрдкрд╛
  • Boiled Noodles, рдЙрдмрд▓реЗ рд╣реБрдП рдиреВрдбрд▓реНрд╕
  • Prepared Chili Garlic Oil, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдЪрд┐рд▓реА рдЖрдпрд▓

For Garnish

  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Noodles Dough

  1. In a bowl, add whole wheat flour, salt to taste, water and knead it into medium hard dough.
  2. Apply oil and keep it aside for 10-15 minutes to rest.
  3. Take a small amount of dough and make thin noodles or in any desired shape.
  4. Dust it with some flour and keep it aise for further use.

For Thukpa paste

  1. In a bowl, add ginger, onions, tomato, tender coriander stems, fresh red chilies, salt to taste and sesame oil.
  2. Transfer it to a grinder jar and make a smooth paste.
  3. Keep it aside for further use.

For Thukpa

  1. In a wok, heat oil, add prepared thukpa paste and cook it for 4-5 minutes until thick or cooked well.
  2. Add mushroom, carrots, cabbage and saute for a few minutes until half cooked.
  3. Add vegetable stock and simmer it for a while.
  4. Add prepared fresh noodles, french beans, spring onion, vinegar and let it boil for 5-6 minutes until cooked well.
  5. Finish it with some sesame oil and transfer it to a serving dish.
  6. Garnish it with boiled noodles, coriander sprig and prepared chili oil.
  7. Serve hot.

For Boiling Noodles

  1. In a pot, add water and get it to a roaring boil.
  2. Add noodles and boil it for 5-6 minutes on high flames.
  3. Transfer it to a tray, add oil and mix it well.
  4. Keep it aside for further use.

For Chili Garlic Oil

  1. In a pan, add oil, garlic cloves, toasted white sesame seeds, chili flakes and cook it for a minute.
  2. Add soy sauce and mix it well.
  3. Transfer it to a bowl and keep it aside for further use.
