Pastry Cream
Learn how to make the mother of all creams: pastry cream, also called crème pâtissière. Cooked on the stovetop, it's a custard with a rich taste and a creamy texture. Classically flavored with vanilla, chocolate or coffee that is often piped into pate a choux aka: éclairs or cream puffs, and spread into pâte sucrée as the base for fruit tarts.
