4 TYPES DAL KHICHDI - One of the healthiest recipes in our Indian cuisine is Khichdi. And there is no one method to make it..In fact there are several variations across the country. Here are 4 of them. How many more do you know?
4 TYPES OF KHICHDI
Preparation time 10-15 minutes (for each type of khichdi)
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Roasting Moong Dal
- 1 cup Yellow Moong dal,
- 1 ½ tsp Ghee
For Khichdi
- 1 cup Roasted yellow moong dal,
- 2 cups Govind bhog rice (any short grain rice)
- 5-6 cups Water,
- Salt to taste,
- 1 tsp Turmeric powder,
- 1 Green chili, broken into half
For Plain Khichdi
- ½ tbsp Ghee,
- ½ tsp Cumin seeds,
- ¼ tsp Asafoetida,
- ⅓ cup Water,
- 1 cup Prepared Khichdi
For Garnish
- 1 tsp Ghee,
- Coriander sprig,
- Papad
For Masala Khichdi
- 1 tbsp Oil,
- 6-7 Black peppercorns,
- 1 tsp Cumin seeds,
- A pinch of asafoetida,
- ½ inch Ginger, chopped,
- 1 medium size Carrot, dice,
- 1 medium size Tomato, chopped,
- 1 tsp Degi red chili powder,
- ½ tsp Coriander powder,
- 4-5 French beans, chopped,
- 1 ½ cup Water,
- 2 tbsp fresh Green peas,
- Salt to taste,
- 2 Green chillies, chopped,
- 1 ¼ cup Prepared Khichdi,
- 1 tbsp fresh Coriander leaves, chopped,
For Garnish
- Coriander sprig
For Bisibele Bhat Style Paste
- 1 ½ tsp Ghee,
- 1 tsp Chana dal,
- 1 tsp White urad dal,
- 1 ½ tbsp Coriander seeds,
- 1 tsp Cumin seeds,
- ¼ tsp Dry fenugreek seeds,
- 2 Green cardamom,
- 2-4 Cloves,
- 8-9 Black peppercorns,
- 1 inch Cinnamon stick,
- ½ cup fresh Coconut, grated,
- 1 tsp Degi red chili powder,
- ¼ tsp Asafoetida,
- ½ tsp Turmeric powder,
- 1 inch Ginger, peeled (optional)
For Bisibele Bhat Style Khichdi
- 1 ½ tsp Oil,
- 2-4 Button chillies,
- 1 sprig Curry leaves,
- ¼ cup Prepared Paste,
- ⅓ cup Water,
- 2 tbsp Carrot, peeled, dice,
- 2 tbsp French beans, chopped,
- 1 ¼ cup Prepared Khichdi,
- ½ tsp Sugar,
- ¼ cup Water
For Bisibele Bhat Style Tadka
- 1 tbsp Oil,
- 2-3 Button chilli,
- 7-8 Cashewnut,
- salted Boondi
For Garnish
- Coriander sprig
For Bengali Style Khichdi
- 1 ½ tbsp Oil,
- ⅓ cup Cauliflower, florets,
- 1 medium size Potato, peeled, dice
For Bengali Style Paste
- 1 tsp Ginger, paste,
- Salt to taste,
- ½ tsp Turmeric powder,
- ½ tsp Cumin powder,
- A pinch of asafoetida (optional)
- ½ tsp Degi red chili powder,
- ¼ cup Water,
For Bengali Style Khichdi
- 1 tbsp Oil,
- 2-3 Cloves,
- 2 Green cardamom,
- 4-5 Black peppercorns,
- 1 Bay leaf,
- ½ inch Cinnamon stick,
- Prepared Paste,
- 1 Green chili, slit into half,
- ½ cup fresh Coconut, grated,
- 1 medium size Tomato, roughly chopped,
- Sauteed Cauliflower & Potatoes,
- 2 tbsp fresh Green peas,
- ½ tsp Sugar,
- ½ cup Water,
- 1 ¼ cup Prepared Khichdi
For Bengali Style Tadka
- 1 tbsp Ghee,
- 1 tbsp Raisins,
- ½ tbsp fresh Coconut, bits
For Garnish
- Coriander sprig
