Cherry fluffy cake


  • 450g of cherries
  • 3 eggs
  • 150g (3/4 cup) of sugar
  • 8g (3/4 tbsp) of vanilla sugar
  • 1 orange (zest)
  • 80g (1/4 cup) of butter (melted)
  • 70g (1/2 cup) of potato starch
  • 8g (1/2 tbsp) of baking powder
  • 110g (1 cup) of all-purpose flour


  1. Prepare the cherries by washing them and removing the stones and cutting them into halves.
  2. In a bowl add the eggs, sugar, vanilla sugar, and orange (zest), and mix with the mixer until the sugar is dissolved.
  3. Add the butter (melted) and sift the potato starch, baking powder, and flour. Mix again with the mixer until all is well combined.
  4. Arrange the cherries on the bottom of the mold (20cm - cake mold) until the bottom is covered. Pour the batter on top and arrange the rest of the cherries on top.
  5. Bake in the oven at 180°C/356°F for 40 minutes.
