Cherry fluffy cake
INGREDIENTS
- 450g of cherries
- 3 eggs
- 150g (3/4 cup) of sugar
- 8g (3/4 tbsp) of vanilla sugar
- 1 orange (zest)
- 80g (1/4 cup) of butter (melted)
- 70g (1/2 cup) of potato starch
- 8g (1/2 tbsp) of baking powder
- 110g (1 cup) of all-purpose flour
METHOD
- Prepare the cherries by washing them and removing the stones and cutting them into halves.
- In a bowl add the eggs, sugar, vanilla sugar, and orange (zest), and mix with the mixer until the sugar is dissolved.
- Add the butter (melted) and sift the potato starch, baking powder, and flour. Mix again with the mixer until all is well combined.
- Arrange the cherries on the bottom of the mold (20cm - cake mold) until the bottom is covered. Pour the batter on top and arrange the rest of the cherries on top.
- Bake in the oven at 180°C/356°F for 40 minutes.
