Heirloom Tomato Salad
Ingredients
3 lbs (1.4 kg) heirloom tomatoes (ideally chilled for 1-2 hours just before serving)
For the Dressing
- 4 Tbsp extra virgin olive oil
- 2 Tbsp white wine vinegar (you can substitute rice vinegar or champagne vinegar)
- 1 clove garlic (minced)
- β tsp dried basil (if you use fresh, triple the amount)
- β tsp dried parsley (if you use fresh, triple the amount)
- β tsp freshly ground black pepper
- Β½ tsp kosher salt (Diamond Crystal; use half for table salt)
- ΒΌ tsp sugar (optional)
